CAKtus Double IPA is a collaboration between Ohio brewers R. Shea Brewing in Akron and Royal Docks in Canton originally released at the First Annual North Canton Craft Brewer’s Festival held in may 2019 at the MAPS museum on the campus of the Akron-Canton Airport, otherwise known as CAK. Built on a foundation of Ohio-grown pilsner malt, the soul of CAKtus DIPA lies in the enormous quantity of Calypso hops and Blue Agave Cactus Syrup used in the brew. It’s a robust beer that packs a creamy white head and lingers just a bit with the flavours of stone fruit and pine.

THE STORY:
R. Shea and Royal Docks have followed a weird parallel arc for the four years the breweries have been around. First, Ron and Dave lived only a few houses away from each other for many years but never knew each other. Then, when they met a few months before their respective breweries opened, they discovered they had chosen nearly identical brewing equipment. In September 2015, the breweries opened within a week of each other. When the breweries realised they needed more space, each announced expansion plans within a week of each other. The brewers have been talking about a collaboration since their first meeting, and since the inaugural North Canton Craft Beer Festival event offered the ability to meet halfway - literally - and launch a beer, it seemed like the natural opportunity to do an Akron-Canton Double IPA. Our white stout is a golden pale, full bodied and strong. We’ve added back the chocolate love, roastiness and vanilla notes with healthy doses of the real McCoy; Ghanaian cocoa nibs, Chanchamayo coffee and Madagascar vanilla beans . At a strength of 8.7% this is a true stout in the historical sense of the word unlike many modern stouts of any colour.

Named for the schooner Lady Lovibond, a ghost ship that appears cast in an eerie white glow to lure rescuers to their own demise in the North Sea, our white stout is likewise not what she appears. With the coffee roastiness, chocolaty maltiness and vanilla sweetness expected of its darker kin, Lovibond eschews typical ingredients and relies instead on real coffee, cocoa and vanilla beans for ballast. Since about 2015, the IBU arms race that dominated the IPA style in the 2000s has waned with a sea-change towards low-bitterness "juicy" IPA's and now their ubiquity has born yet another style. In champaign speak, "brut" means extra dry; likewise, brut IPA's are bone-dry, very aromatic, maybe a bit hazy, maybe not, highly effervescent and nearly devoid of hop bitterness. Most beers need a bit of age and some polishing before being kicked from the nest. Other beers are born to run; daring, thundering, people-pleasing hop bombs that should be allowed to roam immediately.

Dare IPA is one of those beers; a young, unfiltered, unprocessed, aggressively hopped West-Coast-meets-New-England IPA bursting with floral and citrus flavours and aroma straight from the tanks into the can [to the taps] [to the keg].

6.6% ABV | 45 IBU

Far better it is to dare mighty things, to win glorious triumphs, even though checkered by failure, than to rank with those poor spirits who neither enjoy much nor suffer much, because they live in that grey twilight that knows neither victory nor defeat. Read Less
